Not all regions are suitable for growing matcha. Through our long-term research, we've found that only matcha grown in coastal areas with a mild climate tends to have a milder bitterness. Our matcha is sourced from Zhejiang, a coastal province in China that’s also considered the birthplace of Japanese matcha. Its climate closely resembles Japan’s maritime climate, resulting in a matcha of superior taste and color.

A Little Tip:
If a matcha remains bright green even after heat processing or baking, be cautious. Natural matcha contains chlorophyll, which changes color quickly under high temperatures. The only ways to keep matcha green at high heat are:
1. Adding sodium copper chlorophyllin and color protectants
2. Adding brilliant blue FCF and tartrazine (lemon yellow), which combine to form a heat-resistant green

Our matcha is naturally free of any additives, so we recommend storing it in a cool place after opening and consuming it as soon as possible.
